Greek Yogurt Dressing:
- Juice of 1 lemon (fresh is better than concentrated juice)
- 1/2 cup Greek yogurt (fat free or not as you like)
- 1 small-medium clove garlic, minced or if desired finely chopped into a paste
- 1/4 cup EV Olive Oil
- Salt and ground black pepper to taste
So this recipe really gives you a base to work from and play with.
Parmesan Mushroom Chicken
- 2 pounds chicken breast
- 8 ounces mushrooms
- 1 tbs olive oil
- 3 tbs parmesan cheese
- 1 tsp red pepper flakes
- 3 tbs minced garlic
- Slice chicken into cubes.
- Sautee in pan with olive oil until no longer pink.
- Drain any excess liquid.
- Add garlic and toss for 1 minute.
- Add Mushrooms and pepper flakes to pan and sautee until the mushrooms are cooked to your liking.
- Remove from the heat and sprinkle Parmesan cheese over and serve.
- Makes ~8 servings
