Okay, I know this kind of thing has been done before, but I figure I'd follow the blogging masses and list a recipes tab for anyone that wants to take advantage. We all need help with food, right?

If you send me your recipes and any accompanying photos , I will be sure to list them here and post your name and blog/website giving you credit.

Also, if you try a recipe, let me know how it tastes in the comments section, what you may have changed, or anything else that you think might be helpful.

Greek Yogurt Dressing:


  • Juice of 1 lemon (fresh is better than concentrated juice)
  • 1/2 cup Greek yogurt (fat free or not as you like)
  • 1 small-medium clove garlic, minced or if desired finely chopped into a paste
  • 1/4 cup EV Olive Oil
  • Salt and ground black pepper to taste
Now this is the recipe as written and given to me. I usually never follow a recipe to the letter. For this one I found the 1/4 cup extra virgin olive oil to be a bit much so I use half that. Sometimes I squirt in a bit of brown or yellow mustard for added flavor or color. I've used both olive and sesame oil in the same batch, if you know sesame oil it has a bold flavor so use just a bit in place of some of the olive oil.

So this recipe really gives you a base to work from and play with.

    Parmesan Mushroom Chicken

    • 2 pounds chicken breast
    • 8 ounces mushrooms
    • 1 tbs olive oil
    • 3 tbs parmesan cheese
    • 1 tsp red pepper flakes
    • 3 tbs minced garlic
    It was originally 3 Tbs red pepper flakes, then 1 Tbs, but both were too spicy for my wife to eat. So next time, I'll be making it with 1 tsp and see how spicy that is for her.

    • Slice chicken into cubes.
    • Sautee in pan with olive oil until no longer pink.
    • Drain any excess liquid.
    • Add garlic and toss for 1 minute.
    • Add Mushrooms and pepper flakes to pan and sautee until the mushrooms are cooked to your liking.
    • Remove from the heat and sprinkle Parmesan cheese over and serve.

    • Makes ~8 servings
    • 149g a serving
